Protein pancakes, the ideal snack or breakfast!
A delicious recipe for healthy oats and protein pancakes with banana and blueberry. The perfect snack or breakfast recipe, full of healthy ingredients.
2 Ripe bananas
1 Scoop ultra fine oats (or normal oatmeal)
1 Scoop Ekopura protein (vegan of whey)
1/2 Tea spoon cinnamon powder
1 Tea spoon baking powder
1 Pinch of salt
1/4 Cup of cut walnuts
1 Table spoon of coconut oil
Put the banana, oatmeal, cinnamon, baking powder and salt in a blender and blend until you have a nice thick batter. If the batter is still very thin you could add some more oatmeal until it’s nice and thick.
Heat up a middle sized baking pan at medium heat and add some coconut oil to grease the pan.
Pour some batter into the pan to make small to medium sized pancakes. Bake for about 2 minutes or until little bubbles are starting to form and the bottom side is golden brown, then turn it around and bake the other side until it’s golden brown. De intensity of the heat is very important. If too high they will burn and if too low the pancakes will not turn nicely golden brown.
Repeat the above steps until the batter is finished. With this recipe you should be able to make about 9 pancakes.
Serve it with your favorite topping just like in the picture and enjoy!
